History of the food
Talking about the history of food, one can easily extract the data since human evolution has started. It was not possible to live without food and it is not possible to survive even today. During the early days, when we talk about the Pre-Historic Era such as Paleolithic, Mesolithic, and Neolithic, that traces human evolution time, people used to hunt the animals and gather the fruits from the trees, and latterly they had started doing agricultural activities since Indus Valley Civilization. They first started plowing barley and rice and they use to cook them as well.
Well, the history of food is as long as our human history is. The role of food has always been precious in our human life.
Variation Of Dishes From State To State
India is a nation that is so vibrantly diverse and every state exhibits a different kind of culture, tradition, a way of life, language, and cuisine.
India has been very rich when we talk about the main ingredients of food, which are various spices. After the Mughal Period had declined, many foreign companies like Portuguese and some French had started coming to India to colonize and there they started trading the spices from India to their countries.
Indian cuisine has a vast variety of traditional and regional food because different states of India consist of people with different cultures and ways of living and these differences are quite noticeable in their cuisine too. As India is a country full of diversity and culture, the best part comes out that one can try the same dish but with different tastes and names that vary from states to states or one can say culture to culture.
Let’s talk about some famous regional foods of India
Spicy, flavored, and with a blast of butter Punjabi Food is served with love and affection. People all around the world love to eat Punjabi food as it comes with loads of variety and taste. Some of the main dishes are Chicken Tikka Masala, Butter Chicken, Makke-Di-Roti, and Sarso-ka-saag(cornbread & mustard ), Tandoori Chicken, Chole Bhature, The Mighty LASSI.

The dishes are filled with gravies or curry which are filled with spices, nuts and are of creamy texture. The use of dry fruits and nuts are very frequent in this food. Basically the gravies of North Indian cuisines are the combination of all the main spices which bring out the flavor in your mouth. The dishes mainly contains dairy products like butter, ghee(clarified butter), cottage cheese, cream, curd, etc. The main dishes are Rajma Chawal, Litti-Chokha, Awadhi Biryani, Baigan-Bharta, Butter Naan, Roomali Roti, etc. The Sweet Dishes are the best part of this food: Rabdi-Jalebi, Gulab Jamun, Kaju-Katli, etc.

South Indian Food
When it comes to South-Indian food people stereotype it with Idli-Sambar and Dosa but that’s where you can go wrong because South Indian food has a vast variety of cuisines whether it is vegetarian or non-vegetarian food. The five states of the Southern part of India shares similarity in taste because Rice is the main ingredient, the lentils and the spices also play an important role. The native fruits, coconuts, green chilies, garlic, and ginger brings out the aroma in these foods. The main dishes are Hyderabadi Biryani, Vada-Sambar, Dosa, Idli, Puliyogre, Curd rice, etc.

Well, among the other Indians, my favorite dish is Biryani. Yes, a dish that has a rich taste and a long history when it comes to extracting the origin. The Indian subcontinent has a rich history of foreign rulers. Kingdom from Persia and the Turks and Arabs, have left their rich history of food and various dishes. And Biryani is one of them. During the Mughal reign, Awadh was the capital of their kingdom and that is how Awadhi biryani with its delicate flavors got its name. When Aurangzeb became the ruler, he sent his Nizams to Hyderabad where the chefs had to IZAAD the famous Hyderabadi Biryani
With the Nawab Wajid Ali Shah that was deposed to Kolkata, his chef created the traditional Kolkata Biryani by adding potatoes, which are now integral to the biryani of that region.
So many rich restaurants like Behrouz Biryani and Bikkgane Biryani follow the same recipe.
